This year I purchased Madhur Jaffrey’s Curry Bible and I have enjoyed it immensely from a number of perspectives.
The standout features of this book are the geographic range of her recipes and the historic insights into how Indian curry in particular made its journey to Africa and the West. She also takes you off the well worn path to explore the curries of Trinidad, Guyana, Japan and the USA.
Madhur has included a number of recipes using pulses which go beyond the traditional Dals to include some exceptionally tasty dishes from South Africa including the wonderfully named Bunny Chow. Pulses are much neglected in a world dominated by rice and pasta, so it has been with great enjoyment that I have tried (successfully) some of her recipes with these tasty, filling and healthy seeds.
The book is very well balanced in its representation of food groups making it easy to put a curry feast on the table using the one book. The dishes are interesting and diverse – vegetable curries using okra and zucchinis, curried whole chicken and the fish curry with eggplant (aubergines) has been particular favourite.
I like the history she divulges. Food seems more enjoyable when its origins are known. It gives one’s own cooking a sense of place in this most migratory of the arts. I also like to chat, read and drink wine while my partner cooks so a book so full of interesting history gives one much to purvey to the other.
The book is beautifully designed with excellent clear layout, good sized typeface, lovely little illustrations, historic images and great photographs. This is one of those rare books that delight the senses, intrigues the intellect and delivers on the practice.
